Part of my new job is to make an appearance at all of the trade shows. The NETA conference was back at New Orleans and we made a point to take the pre-conference tour of the bayou along with a Cajun boil on the bayou with some very fresh crawfish.
We started the day on a 6 person airboat and went to see a bunch of alligators and go where the larger boats couldn’t go. We did see a bunch of alligators that all seemed to be quite trained by the constant feeding by the tour guides. The tour guides start out feeding the alligators marshmallows to get the alligator’s attention and then get them to jump out of the water with some chicken.

We did a big tour in the evening just before the boil. As Lina was going crazy over her third basket of crawfish, we noticed the cook feeding a couple of alligators on the beach less than 50 feet from where we were sitting.
This was the best part of the trip as we were pretty bored of Bourbon Street and the French Quarter after a couple of hours.
